Tofu-Chili Taco With Kimchi - The New Los Angeles Fusion - NYTimes.com
I have been following this taco truck on Twitter and I’m enthralled by it. I absolutely love the idea that there is a taco truck roaming around LA serving a fusion of Korean+Mexican food and communicating with Twitter. What excites me the most is how culturally significant this fusion is between the culture of Korean cuisine and making it accessible to such a broader population. It’s even more eye-popping that it combines Mexican cuisine and the marriage of a quesadillas with kimchi is a staggering sign of neo-Americana cuisine. If you’ve ever wondered what it is to be American, this story, this taco truck is it.
I’m incredibly excited about the prospects of Korean cuisine being nationally accessible. This story takes my breath for it’s cultural mashup and makes me hungry at the same time.
